*Tommy's Margarita:

Tommy's is a mexican restaurant in San Fransisco and the world's best tequila bar in the world. It has also pours the most extensive collection of 100% agave tequila outside of Mexico .

According to  Mexican laws a spirit can be named TEQUILA, when is the 100% distill product of the Mexican native plant called Blue Agave. (Agave Azul Weber Tequilana). In a few words these are the most quality tequilas, and actually are the only ones that you will find at Baba Au Rum! So please trust our suggestions about tequila when you find out that we dont have your favorite popular (but not really quality...) tequila.

We make Tommy's Margarita mixing 100% de Agave Tequila, fresh lime juice and organic agave nectar. Fresh crispy and classic.

Agave nectar is a natural sweetener commercially produced from several species of the Agave plant.  It can be produced in specific Mexican  states

pertaining to certificate of origin!

At Baba Au Rum we have a small but appreciable collection of the best 100% blue Agave Tequilas.  You can choose one of them to make your own Tommy's Margarita, or enjoy it neat.

Blanco (Silver or Plata) Tequilas are generally unaged but can be aged up to 60 days.

Reposado Tequilas are  aged for a minimum of 2 months up to 1 year in any size oak containers.

Añejo Tequilas are aged for a minimum of 1 year in barrels no larger than 600 liters in size!

This is a New Orleans classic cocktail founded in 1840's-50's and one of your most beloved cocktails in our Bar.  We can say its the grandfather of later famous cocktails such the Sidecar, Margarita and Cosmopolitan! 

Baba Au Rum is the first Greek Bar that ever made this cocktail for its intellectual clientele!

Perfect quality Brandy, Maraschino liquer, our homemade bitters among other ingredients, served in a cocktail glass rimmed with sugar and garnish with a spiral of orange (or lemon if you wish)

And here is the Baba Au Rum's  summer- autumn cocktail menu!  Within the last six months that Baba Au Rum Bar is open, we printed 300 copies

of that beautiful cocktail book-menu, a piece of our soul...

SIX COCKTAILS THAT YOU HAVE TO TASTE (AT LEAST) ONCE IN YOUR LIFE!

* In case you are wondering, these are the 6 cocktails we believe you should try at least once in your life:

Juleps, Sherry Cobbler, the Ramos Gin Fizz, the Original Zombie, Tommy's Margarita, and a Crusta!

*MINT JULEP:

   A blend of Bourbon whisky,  Rye Whisky, and VSOP Cognac(!) shaking with fresh mint, simple homemade syrup and bitters, served in  the traditional Julep Cup with lots of crushed ice and thin pineapple slices on the edge!

                   This is a classic old American cocktail!  We use one the most quality bourbons , called Woodford Reserve, Wild Turkey Rye whisky, and Courvoisier VSOP cognac . VSOP  means "Very Special  Old Pale, where the youngest brandy is stored at least four years in cask, but the average wood age is much older.  (according to the Bureau National Interprofessionnel du Cognac)

*SHERRY COBBLER:

   Founded around 1830's,  that was the first cocktail that people used a straw to drink it!   Harry Johnson  a professional bartender for most of his life and author of the legendary "Harry's Johnson bartender's manual"  said around 1880, that Sherry Cobbler was the most popular cocktail in the United States!             

                We make it, mixing Dry Sherry, Caribbean fruits, grated nutmeg, and on the top we float Myer's Jamaican  heavy dark rum!

                Talking about Sherry, keep in mind that we are not talking about Cherry liquer! Sherry is a fortified wine  made from white grapes that are grown near the town of Jerez in Spain.  I strongly recommend a glass of good  "Fino Sherry" before your dinner, or an "Oloroso Sherry" after that. Oloroso means "άρωματικό"  for the Greek friends!

*RAMOS GINN FIZZ:

Mr Henry C. Ramos  was the owner and founder  of the famous Imperial Cabinet  Bar, in New Orleans 1888!

He is also the founder of this legendary cocktail, the most popular in the States after the end of the drink prohibition in 1933.

We make this Fizz mixing Plymouth Gin, fresh lemon juice, homemade syrup, egg white, fresh cream, and a few dashes of  "The Bitter Truth" Orange Flower Water, which is the ingredient that makes the difference!  Soda on the top.

Orange flower water is a clear, perfumed distillation of fresh bitter orange blossoms.

Back From Holidays!

The time has come, and if that makes us happy, it makes us feel a bit of melancholy as well, thinking all the beautiful islands we visited the last 2-3 weeks in the Aegean Sea, like Antiparos, Ikaria (with the Quentin Tarantinos - like bars), Patmos, Kithira....

But yes we are back and on Tuesday, August 25,  Baba Au Rum will open again its door (everyday from 11.00 morning till late night) to all you cocktail aficionados!  Plus we celebrate our first- official cuisine- day, with a free buffet !  And of course more cocktails, rums like Zacapa, the only which its distillery (in Guatemala)  does not  face the Caribbean  but the Pacific Sea, the ultra premium ''Bicentenario'' from Venezuela, aged cachacas from Brazil and rare sample malt whiskies!

Tequila Day!

I know its funny, but you have to know that every July 25th  Americans  are celebrating  the Tequila Day!!!

A good chance to drink a perfect Margarita after all.

And when we talk about tequilas you better forget  all those horror hangover days that i am sure you have at least many times in your life!

At Baba Au Rum , we talk only about  100% Blue Agave Tequilas, which means the best and most quality of them.

Blue agave or tequila agave, is a plant that it is  grows natively in Jalisco Mexico. It plays an  important economic  role as the base ingredient of tequila!

Like all great cocktails, the ingredients should accentuate what's great about the liquor.  So we forget about the orange curacao (Triple Sec, Cointreau) and use Organic Agave Nectar.That way  Margarita tastes like never before.  We also forget to salt the rim!....

  • 50 ml  100% Blue Agave.  (or terragon infused White tequila or Rosemary infused White Tequila!) See pic above
  • 30 ml  Fresh Lime Juice
  • 15 ml  Organic Agave Nectar
  • Shake very well  and double strain to a Cocktail glass!

    Love Ginger with a touch of summer?

    So come to Baba Au Rum and try:

               50 ml Angostura 5 years old rum from Trinidad and Tobacco

                40 ml Dragon Fruit puree

                10 ml homemade sugar syrup

                10 ml fresh lime juice

                25 ml homemade ginger syrup.

    Shake all ingredient in and serve in a cocktail glass with crushed ice. Colours everywhere!!!

    The Zombie inside me!

    "TIKI" as a word was initially used to describe  the giant totems in the Eastern Islands, as well as  the Polynesian culture's "First Man" the one that we  would call "Adam".

    Timejumping in the 1930's two legendary bartenders and bar restaurant owners, Don the Beachcomber and Trader Vic, gave birth to the Tiki craze with their Tiki bars being THE COOLEST place to be seen,gathering actors ,politicians and the so called high society ,all in aloha leis and hawaian shirts drinking from giant straws  strange multi-colored conjoctions served in ceramic tiki mugs and volcano bowls.

    Zombie cocktail was created in 1934, with a mix of 5  rums, fresh  fruits (exotic for us but local for them) and other secret ingredients.
    Don  would only allow customers to drink a maximum of 2 Zombies per night... and that was a strict rule.
    Only one person of the so called underworld trying to prove how tough he was ,bet Don he could manage more and he certainly would have if he had not fainted few sips before he finished the third one.

    DtheBintBeach's original recipes for the Zombie and other Tiki drink have been recently published in Sippin' Safari by Jeff "Beachbum" Berry.

     

     

    Don  instructions on his bartenders contained coded references to ingredients such as "Donn's Mix", the contents of which were only known to him. As a result of Beach's secrecy and the enormous popularity of these drinks during the Tiki craze, countless variations on the Zombie emerged.

    Beach's original recipes for the Zombie and other Tiki drinks have been recently published in "Sippin' Safari" by Jeff "Beachbum" Berry a really great guy who has one of the worst jobs on the planet.Drinking rum and writing about it that is.


    At Baba Au Rum Bar we make our own "Zombie blend' using 5 different rums we import from the Carribean seas, including heavy dark Jamaican  rum, , Demerara and  Wray & Nephew overproof rum and more(...) as well as homemade Falernum liquer, fresh fruit juices, homemade or "Bitter Truth " bitters, dashes of Pernod Anis and...

    Ian -Rum Ambassador- Burrell

    Last Monday we had the  chance to meet Ian -Global Rum Ambassador- Burrell, during a great seminar on Rum, organised by the Bar Academy, Athens.

    We really feel very lucky that Ian Burrell shared with us not only part of his huge knowledge about Rum, but his great smiles as well. Ian Burrell is  the man who probably knows more about rum than everyone else on this planet  and also the host  of the "Rum Festival"  every October in London! www.rumfest.co.uk   Born in Jamaica and grown up in London, Ian took us on a tasting journey with some great rums like Le Domaine de Séverin, Appletton Estate 8 years and 21 years and more!  Ian also visited  Baba Au Rum to check our rums, where he counted  70 of them and gave really useful tips on what rums to invest to in the near future.

    To prove that we are really modest guys we took no pride at all  to see the following text at his facebook wall!:

    New rums just arrived!

    habanaΟ συνάδελφος Ανδρέας Ρουσόπουλος μόλις γύρισε από την Αβάνα και μας στέλνει την φωτό!

    Και συνεχίζουν να έρχονται.... Για ρούμι μιλάω φυσικά και τις νέες αφίξεις που είχαμε αυτήν την εβδομάδα.

    Εκτός από την σειρά του Τζαμαικανού Appleton Estate white αλλά και το VX,  που επιτέλους έφτασε στην Ελλάδα, με κανονική διανομή, ήρθε ειδικά για το Baba Au Rum, το θρυλικό Zacapa από την Γουατεμάλα, για πολλούς το καλύτερο ρούμι στον κόσμο(!!!), όπως και μια νέα παραλαβή του Diplomático Reserva Exclusiva, νομίζω για εμάς το καλύτερο ρούμι στον κόσμο, Gosling's Black  από τις Βερμούδες, ιδανικό για ένα "Dark and Stormy" Cocktail,  ένα Havana Club Cuban Barrel Proof, δώρο της φίλης μας της Χαράς κατευθείαν από το εργοστάσιο του Havana Club στην Κούβα, αν και το όνειρο μας είναι ένα ultra-premium Havana Club Máximo Extra Añejo, μοναδικό παλαιωμένο χειροποίητο σχεδόν ρούμι. Η αίσθηση του μεταξιού , του βελούδου και της μαύρης σοκολάτας είναι  ότι σου έρχεται πρώτα στο στόμα, λένε όσοι το έχουν δοκιμάσει...

    Το Appleton Estate VX είναι ένα μπλέντ από 15 παλαιωμένα ρούμια, και όπως οι ίδιοι παραγωγοί υποστηρίζουν, ιδανικό για κλασσικά κοκταίηλς! Δεν διαφωνούμε, και δημιουργούμε το "Original 1934's recipe Mai Tai"  με αυτό το μπλέντ!  Νότες από μαύρη ζάχαρη, γλυκά μπαχάρια και αποξηραμένα φρούτα έρχονται στην μύτη σου, και στο στόμα σου όταν το δοκιμάσεις.

    diplo 3  diplo 4 To Diplomatico Reserva Exclusiva  θα έλεγα ότι είναι το καμάρι ολόκληρης της Βενεζουέλας, της χώρας που παράγει αυτό το σκούρο χρυσό γλυκό ρούμι, ύστερα από 12 χρόνια παλαίωσης σε βαρέλια που προηγουμένως περιείχαν αμερικάνικο ουίσκι. Παρόλα αυτά το βαρέλι είναι διακριτικό στην μύτη, ενώ ακόμη αρώματα από φρούτα της Καραιβικής, και μελάσσα είναι παρόντα. Στο στόμα εντυπωσιάζει με το γεμάτο σώμα του, και τα αρώματα καραμέλας και καπνού (Να και το βαρέλι!).  Σίγουρα ένα από τα αγαπημένα μας ρούμι εδώ στο Baba Au Rum,  και ο σίγουρος τρόπος για να πείσουμε πολλούς από τους πελάτες μας που δεν είναι φανς αυτού του αποστάγματος,  ότι ναι, μπορούνε να πιούνε ρούμι και να ενθουσιαστούν με αυτό!

    Talk Of The Town

    Οι νύχτες περνάνε, ο κόσμος συνεχίζει να έρχεται, να ρωτάει, παίρνει στα χέρια του το βιβλιαράκι-κοκταίηλ μενού, χαμόγελα έκπληξης σχηματίζονται όταν το ανοίγει, άλλοι μπερδεύονται - αστο θα πάρω ένα μοχίτο, - δεν πειράζει άσε το μοχίτο, θα σου φτιάξω κάτι εγώ, επιστροφές δεχόμαστε αν δεν σου αρέσει και τότε πάμε για το μοχίτο-  άλλοι δηλώνουνε ότι θα δοκιμάσουνε τα πάντα(!!!) και το ενοοούνε, ξεκινάνε από την αρχή, μερικοί όπως η Κική, κοντεύουνε, έχουνε μάλιστα αρχίσει να ζητάνε να τους φτιάξουμε και άλλα κοκταίηλς εκτός καταλόγου,  η Βιργινία μάλιστα χθές το βράδυ ήταν πολύ συγκεκριμένη, - θέλω κοκταίηλ εκτός καταλόγου με ρούμι μεταξύ γλυκού και πικρού(...), μάλιστα δεσποινίς, (φτιάξαμε λοιπόν ένα κοκταίηλ με ρούμι Corumba 12 ετών -τζαμαικανό στυλ από την Νέα Ζηλανδία όμως, Campari,  σιρόπι βανίλλιας και Baba Au Rum Bergamot Bitters), της άρεσε πολύ , το ονομάσαμε Virginia (something...) προς τιμήν της.

    Βγαίνω το πρωί για δουλειές και συναντάω φίλους και γνωστούς στον δρόμο, μου λένε για το μαγαζί, ανοίγω το Αθηνόραμα και στην κεντρική σελίδα του, μιλάει για το νέο μπαρ που είναι το νέο "talk of the town" , συνειδητοποιώ ότι μιλάει για το "Baba", ειλικρινά κυλάμε σαν ποτάμι και δεν έχουμε καταλάβει ότι μιλάνε τόσο για μας...!

    Αθηνόραμα 16 Απριλίου 2009:

    Ένα νέο, όμορφο bar, που εντυπωσιάζει με την απόλυτα ενημερωμένη κάβα του και την ποιότητα των ποτών του, γίνεται talk of the town.

    Η διακόσμησή του συνδυάζει το pop design των '60s, τα έντονα χρώματα και τα παλιά items που προϋπήρχαν στο χώρο. Εξήντα ετικέτες ρούμι (πενήντα από τις οποίες δεν διανέμονται στην Ελλάδα) καθώς και σπιτικά bitters εκτίθενται περήφανα στα ράφια της μπάρας και σε προδιαθέτουν να παραγγείλεις κοκτέιλ. Το προσωπικό σε υποδέχεται με ένα κατατοπιστικότατο βιβλιαράκι που περιέχει την ιστορία του καθενός από τα 7 κοκτέιλ «που πρέπει να δοκιμάσεις τουλάχιστον μία φορά στη ζωή σου» ή σε παροτρύνει να σχεδιάσεις το δικό σου με βάση το απόσταγμα, το σιρόπι, το bitter και το βαθμό της οξύτητας που επιθυμείς.
    Οι barmen, που «το 'χουν τρελά», τόσο σε επίπεδο γνώσης όσο και σε τεχνική, δουλεύουν με κέφι κι έχουν μια ιστορία να σου πουν για κάθε κοκτέιλ που θα σου ετοιμάσουν. Θα σου προτείνουν παράλληλα και το σωστό τρόπο να το δοκιμάσεις (για maximum απόλαυση, η μύτη σου θα πρέπει να βρίσκεται κοντά στο δυόσμο στην περίπτωση του Julep, ενώ το She Rocks, συνταγή του «Baba», θα το συνοδεύσεις με όσες μαριναρισμένες σταφίδες θέλεις, για να αμβλύνεις την οξύτητά του). Η ποιότητα των κοκτέιλ είναι εξαιρετική, το value for money δεδομένο, γι' αυτό και το word of mouth λειτούργησε ακαριαία στην περίπτωση του «Baba Au Rum». Αν και μετρά μόλις τρεις εβδομάδες λειτουργίας, συζητιέται ήδη πολύ και γεμίζει κάθε βράδυ με ένα late 20s-early 30s μουσικά ανήσυχο κοινό, το οποίο, εκτός από τα κοκτέιλ, απολαμβάνει και τις εκλεκτικές επιλογές των DJs κάπου ανάμεσα στα μαύρα ακούσματα των '60s και στην indie pop. Η φιλοσοφία του, πάντως, είναι να ανεβαίνει από νωρίς, γι' αυτό και μέχρι τις 9 μ.μ. προσφέρει τρία από τα κοκτέιλ του καταλόγου του σε εξαιρετικά χαμηλή τιμή (€ 5).

    Y.Γ.: Μέσα στην εβδομάδα που μας πέρασε το Bar Guru Bar ανακοίνωσε το οριστικό του κλείσιμο, μια είδηση που δεν πέρασε καθόλου απαρατήρητη σε εμάς. Ηταν εκεί που "ανδρωθήκαμε" σε αυτήν την δουλειά, που μάθαμε, κοντά σε σπουδαίους συνάδελφους, και δεν ξεχνάμε ότι ήτανε το μπαρ που έφερε νέο αέρα στην κοκταίηλ σκηνή της πόλης μας (αν υποθέσουμε ότι υπήρχε ή υπάρχει κάτι τέτοιο)

    "Μόλις άνοιξε το μπαρ του Χρήστου Χουσέα και του Θάνου Προυναρού στο νούμερο 6 της οδού Κλειτίου (όταν πήγαμε, μύριζε ακόμη... μπογιά) και οφείλω να ομολογήσω ότι είναι ωραίο blend: μικρό, όμορφο, με γαλαζοκόκκινο look και κεντρικό άξονα τα κοκτέιλ - ιδίως αυτά με ρούμι, μια και λέγεται «Baba au rum». Στον κατάλογο θα διαβάσετε το στόρι των επτά κοκτέιλ «που αξίζει να δοκιμάσεις τουλάχιστον μία φορά στη ζωή σου», η λίστα των ποτών είναι πολύ ενημερωμένη και κρύβει αλκοολούχα διαμαντάκια·

    We love to...

    Cocktails 1

    We love that (when you come to Baba Au rum) you love to experiment with new cocktails and new tastes!

    We really really love and we are very proud of making you ask (almost) only cocktails and premium spirits.

    And we are really really really happy that (at least at the moment) no one poped up into the bar asked for a "green" (beer)!!!

    Below are the two in house cocktails that we did create for the CIROC Vodka international competion:

               SHE ROCKS

    * 30 ml Ciroc Grape Vodka

    * 20 ml Remy Martin Cognac

    *20 ml pink grapefruit juice

    *15 ml Briottet Creme De Figue

    Well Shaken.  Served  into a martini cocktail glass, with drained grapes marinated in a Greek traditional hazelnut liquer, on the side.

    Sweet or bitter, its up to you!

            CIROC AND CO MARTINI

    *   50 ml Ciroc Grape Vodka

    *  10 ml  Eau De Vie Poire Williams

    * 10 ml Homemade Lavender and Black Pepper syrup

    Stirred and served into a martini glass, with a lemon peel and a lavender flower

    Dear fellow travelers, greetings and welcome to Baba Au Rum, the “newest’ bar in downtown Athens!

    As our name suggests, we have an… inclination towards rum, with a selection of over 60 different brands (for the beginning), but we must confess, that in B.a.R. we are absolutely i n l o v e with cocktails!

    We love the magic behind the mixing of ingredients and their transformation into something new… We love creating new combinations and recipes. We love new experiences and we are always on the lookout for the “perfect” taste, the “ideal” combination, the “ultimate” mixing, and the “best” whisky”, “best” vodka or rum…

    This is the reason why we select and import most of the spirits in B.a.R. ourselves, straight from the producers from all over the world. We are also proud that we make our own in-house Blends and Bitters ensuring the highest quality of ingredients.

    For tonight, we suggest you try one of the 7 cocktails we believe anyone should try at least once or indulge yourself into one of the House Cocktails or maybe even design your own drink!

    * In case you are wondering, these are the 7 cocktails we believe you should try at least once in your life: Juleps, Sherry Cobbler, the Ramos Gin Fizz, the Original Zombie, Tommy's Margarita, a Brandy Crusta, and Poetry Kills, an in-house molecular cocktail (named after our first choice for the bar name but lost from “Baba Au Rum”).

    The Julep Cocktail

    top_mint_julep No Kentucky Derby in Louisville US nowadays , would be complete without the venerable Mint Julep on every  first Saturday in May.

    One fine morning back in the 1790's, an american collumnist with a rather interesting sense of humor used the word "Julep", which for over 200 years meant "medicine" or"elixir" to describe a very successful cocktail served in a royal wedding. Since then and for about 70 years "Julep" took over America and the rest of the world, introducing the trend of ice drinks, something that until then, was  a privillege of the few. The first Juleps were made with Brandy. Many versions followed, with the "Whiskey Julep"still being the most popular.

    At Baba Au Rum,  we offer Julep with our own, VSOP Cognac, Rye and Bourbon whiskey blend, homemade syrup and fresh mint or peppermint, served in the metallic traditional Julep cup, with lots of crushed ice and thin pineapple slices on the edge!
